The Australian meat pie is a national institution — a hand-sized shortcrust pastry shell filled with minced or chunked beef in a thick gravy, topped with puff pastry, doused in tomato sauce (ketchup), and eaten at the football, on the way to work, or at 2am after a night out. The pie floater (a pie floating upside down in thick pea soup) is a South Australian delicacy. Harry’s Café de Wheels in Sydney is Australia’s most famous pie vendor, a local legend since 1938.
