Caribbean spiny lobster — known locally as 'crawfish' — is one of the Bahamas' great luxuries and a centrepiece of Bahamian fine dining and local home cooking alike. Unlike Maine lobster, Bahamian crawfish has no claws — the meat is in the tail and is sweet, firm, and lean. Grilled over charcoal with butter, garlic, and lime, or stuffed and baked Bahamian-style with breadcrumbs, onion, and peppers, it's exceptional. Lobster season runs August through March — visit during these months for the finest specimens.
