The Bahamas' most exciting street food — fresh raw conch, sliced thin and mixed with diced tomato, onion, sweet pepper, and Scotch bonnet chilli, then doused in fresh lime juice, sour orange, and a splash of goat pepper sauce. Made to order at conch salad stands throughout Nassau (the most famous is at the Nassau Fish Fry on Arawak Cay), it's served in a small bowl — incredibly fresh, tangy, spicy, and briny.
