Hammour — orange-spotted grouper — is the king of Gulf fish and Bahrain’s most prized seafood. Caught fresh from the Arabian Gulf daily, it appears on restaurant menus grilled whole, fried crispy, steamed in broth, or cooked into machboos. The flesh is firm, white, and sweet — exceptionally fresh when bought at Manama’s Central Fish Market in the early morning. Local restaurants around the market serve it simply grilled with rice and salad for a quick, outstanding lunch at very low cost.
