Bahrain’s favourite snack and Ramadan staple — crispy triangular pastry cases filled with spiced minced meat, onion, and herbs (or cheese and parsley), then deep-fried until golden. Samboosa are sold at every bakery, street stall, and supermarket throughout Bahrain, but during Ramadan they are consumed in vast quantities at iftar (the meal breaking the daily fast). Every family has their own recipe with slight variations in spicing. The Bahraini version tends to be smaller and crisper than Lebanese or Iraqi sambousek.
