Denmark’s unofficial national dish — pork roasted slowly until the fat layer crisps into shattering crackling (sværen), served with red cabbage, caramelised potatoes (brunede kartofler), and brown gravy. Flæskesteg is the centrepiece of the traditional Danish Christmas dinner (Julefrokost) and appears at every family celebration. The crackling is considered a mark of the cook’s skill — and Danes are very serious about it.
