Bouillabaisse

Marseille's legendary Provençal fish stew — made with at least three types of Mediterranean fish, saffron, fennel, tomatoes, and served with rouille (garlic-saffron sauce) and crusty bread. An authentic bouillabaisse must follow the Marseille Charter. The best in the world is served at Chez Fonfon and Le Miramar in the Vieux-Port.
