France produces over 1,200 varieties of cheese — from Brie de Meaux and Camembert de Normandie to Roquefort, Comté, and Époisses. Charles de Gaulle famously said 'How can you govern a country that has 246 varieties of cheese?' A cheese course (plateau de fromages) after the main meal is an essential part of the French dining ritual.
