Provence's most famous vegetable dish — a slow-cooked stew of courgette, aubergine, tomatoes, peppers, onion, and herbs de Provence. Best eaten in summer with fresh produce from a Provençal market. Made famous worldwide by the Pixar film, but the real dish from Nice's and Marseille's home kitchens is something else entirely.
