Rome's most iconic pasta dish — spaghetti or rigatoni tossed with guanciale (cured pork cheek), Pecorino Romano, eggs, and black pepper. No cream, no onion. Traditionally served at trattorias in the Testaccio and Trastevere neighbourhoods of Rome.
