Japanese Wagyu — Kobe, Matsusaka, and Omi breeds — is renowned worldwide for extraordinary marbling, buttery texture, and depth of flavour. Best experienced as thinly sliced shabu-shabu or sukiyaki hot pot, or as thick-cut steak. Kobe is the most famous source, but Matsusaka beef from Mie Prefecture is equally celebrated.
