Cataplana

The signature dish of the Algarve — a rich, aromatic seafood and/or meat stew cooked and served in a copper clam-shaped vessel called a cataplana. The sealed pot traps steam and concentrates flavours, producing intensely savoury results. Classic versions combine clams, prawns, chouriço, tomato, onion, and white wine. Every Algarve restaurant has its own recipe.
