Som Tam (Green Papaya Salad)

A refreshing and intensely flavoured salad of shredded unripe papaya pounded in a mortar with chilli, garlic, lime, fish sauce, and palm sugar. Originated in Isaan (northeast Thailand) and now eaten nationwide. Customise the heat level — Thai spicy is not for the faint-hearted.
