Born on the Texas–Mexico border, Tex-Mex is a bold fusion of American and Mexican flavors. Signature dishes include beef fajitas, cheese enchiladas with chili gravy, nachos, breakfast tacos, and the puffy taco — all best enjoyed in San Antonio or Austin. Tex-Mex differs from authentic Mexican cuisine through its heavy use of yellow cheese, beef, and flour tortillas.
