Ducana and Saltfish

A beloved Antiguan breakfast and Sunday dish — ducana are sweet steamed dumplings made from grated sweet potato, coconut, sugar, spices, and raisins, wrapped in a banana leaf and boiled until firm. They’re served alongside saltfish (salted cod) sautéed with onions, tomatoes, garlic, and peppers. The sweet-savoury contrast is deeply satisfying and utterly Caribbean. Ducana and saltfish is as close to a national breakfast as Antigua gets.
