Aruba’s surrounding Caribbean and Atlantic waters deliver superb fresh seafood daily. Red snapper (pargo) and mahi-mahi are the most common local fish — grilled whole with lime butter, fried crispy, or cooked in a Caribbean tomato and pepper sauce. Conch (carco) appears in soups, salads, and fritters. Jumbo shrimp, lobster tails, and fresh ceviche made with local catch are staples of both local restaurants and resort dining. The best fresh fish is found at local lunch spots in Oranjestad and at the harbour-front in San Nicolas.
