Bulgaria's favourite grilled street foods, found at every skara (grill restaurant) in the country. Kebapche are elongated spiced minced pork rolls grilled over charcoal; kyufte are round patties of the same mixture. Both are seasoned with cumin and black pepper, served with shopska salad, chips, and lyutenitsa (pepper relish). Simple, satisfying, and deeply Bulgarian.
