Cambodia's most popular breakfast dish — thin slices of pork marinated in coconut milk and garlic, then slowly grilled over charcoal until caramelised and fragrant, served over broken rice with pickled vegetables, a bowl of clear ginger broth, and fresh cucumber. Simple, perfectly balanced, and deeply satisfying, bai sach chrouk is served by street vendors throughout the country from 6am until the rice runs out, usually by 9am. It costs roughly USD 1–2 and is one of the world's great breakfast experiences.
