Cambodia's most celebrated dish and the best introduction to Khmer cuisine — freshwater fish marinated in a rich, fragrant coconut milk curry (kroeung) made from lemongrass, galangal, kaffir lime leaves, turmeric, and chilli, mixed with egg to create a light, mousse-like texture, then steamed in a banana leaf cup until set. The result is silky, aromatic, and subtly spiced — unlike any curry elsewhere in Southeast Asia. Found at every Khmer restaurant and a must-order for first-time visitors.
