One of Croatia’s most distinctive dishes — creamy Adriatic risotto made with cuttlefish or squid and coloured jet-black by the cuttlefish ink. The ink gives a rich, briny depth of flavour unlike anything else. Finished with olive oil and Parmesan, it’s a staple of every Dalmatian and Kvarner konoba. Best paired with a glass of Malvasia white wine from Istria.
