Finnish rye bread (ruisleipä) is darker, denser, and more intensely flavoured than any other rye bread in the world — baked from 100% whole-grain rye sourdough with no wheat. The classic hapankorppu (hard crispbread ring) is hung on wooden poles to dry and is eaten daily at breakfast and lunch. Reikäleipä (rye bread with a hole) is another traditional form. Finns eat more rye bread per capita than any other nation — it is the bedrock of the Finnish diet.
