Makkara (Finnish Grilled Sausage)

No Finnish summer or sauna experience is complete without makkara — a thick, coarsely ground pork sausage grilled over an open fire (nuotio) or on the sauna stove. The skin crisps and chars while the interior stays juicy, served with mustard on rye bread. Tampere is famous for mustamakkara — a distinctive dark blood sausage eaten with lingonberry jam, which has been a Tampere tradition since the 19th century. Eating makkara by a lakeside fire is the quintessential Finnish experience.
