Reindeer meat (poro) is central to Sámi and Lappish food culture. The classic Lapland dish is poronkäristys — thinly sliced reindeer sautéed in butter with onion, served with mashed potato, lingonberry jam, and pickled cucumber. Reindeer meat is lean, rich in flavour, and deeply sustainable — Finland's 200,000 semi-wild reindeer are herded by Sámi families across the Arctic tundra.
